Fluffy Banana Pancakes with Strawberry Compote

I love mornings. I am definitely one of those people who wakes up an hour early so that I can have a coffee by myself before everyone else wakes up. And I love mornings that start with a cooked breakfast, especially pancakes. But pancakes aren't always the healthiest option, and oftentimes leave you feeling overfed and full of sugar. These are a lighter, healthier option with no refined sugar while not scrimping on flavour. I have tweaked a few things in this  recipe in the BBC summer diet plan  to create this recipe, and I think it is better for the edits (although the added honey does add a few calories). Flat Bread Pizzas



Cooking only for myself means that I either have to cook quite small meals, or go big and freeze. Since I'm not a massive fan of the taste of frozen food, I tend to cook small, and this recipe is perfect for a individual meal, or for two people. And I'm always looking for ways to use up extra veg in the fridge before it goes off!


Flat bread crust isn't traditional, but it sure was delicious! This flat bread was inspired by a version of Jamie Oliver's, which you can find here. If you cook it in a pan first, finishing it off in the oven, it's going to have that delicious crispy outside with a lovely fluffy inner.


My only tip with these is that you make sure you mix the yogurt with the olive oil before adding it to the flour, or you will have streaks of olive oil. Oh, and when you're assembling the pizzas, put any fresh herbs at the bottom so they won't burn.

Flat Bread Pizzas

Serves 2

Ingredients for flat bread:
4 heaped tablespoons self-raising flour
3 tablespoons plain greek yogurt
1 tablespoon olive oil
pinch of salt and pepper

Ingredients for pizza toppings:
tomato sauce (store-bought or home-made)
4 leaves of fresh basil, ripped up
4 black olives, chopped
4 mushrooms, chopped
3 cherry tomatoes, halved
1/2 ball of mozzarella, ripped into pieces
pepper

Preheat oven to 230C. Prepare the toppings according to the instructions above and set aside.

In a bowl, mix the yogurt and greek yogurt together. Add the flour, salt, and pepper, and mix it with a spoon until it starts to come together. Use your hands to bring it completely together, and then shape it into a ball. On a floured surface, knead the dough until it isn't sticky on the outside--about one minute or so.

Put a frying pan on medium heat. Separate the dough into two balls. With your hands, flatten the balls out into disks that are about 3mm thick. They will be quite thin. Place the disks into the pan and cook until browned on both sides. Remove to a baking sheet dusted with flour.

Spoon 1-2 tablespoons of the tomato sauce onto each disk. Top with basil first as it will burn. Then add the olives, mushrooms, cherry tomatoes, and dot the mozzarella pieces on top.

Bake in the prepared oven for 10-15 minutes until the cheese has melted and everything is starting to brown. Remove, cut into pieces, and enjoy.
