Fluffy Banana Pancakes with Strawberry Compote

I love mornings. I am definitely one of those people who wakes up an hour early so that I can have a coffee by myself before everyone else wakes up. And I love mornings that start with a cooked breakfast, especially pancakes. But pancakes aren't always the healthiest option, and oftentimes leave you feeling overfed and full of sugar. These are a lighter, healthier option with no refined sugar while not scrimping on flavour. I have tweaked a few things in this  recipe in the BBC summer diet plan  to create this recipe, and I think it is better for the edits (although the added honey does add a few calories). Banana Pancakes with Strawberry Compote Serves 2-3 Time: 20 minutes 20 strawberries 2 TBSP water 4 tsp honey 2 smashed bananas 60g plain flour 1/2 tsp bicarbonate of soda 2 eggs 50ml milk Take the tops off the strawberries and cut them in quarters. Day 3 of BBC Good Food Diet


What is it with day 3 of a diet and me? Like seriously, why can't my body just take food changes a bit easier? I was seriously craving carbs this morning. Yes, yes, I know...potatoes are carbs. But I'm talking bread. Like all I wanted was a big hunk of crusty bread toasted in butter and slathered in jam. Instead, I had yogurt.

In all honesty, while I was a bit lethargic today, I think that's genuinely just from the shock and awe of my body switching from steak, cream, and mashed potatoes almost every day to a very healthy diet and I totally expected it. I'm actually really impressed with the food plan as a whole. (I'm calling it a food plan because it genuinely doesn't feel like I'm on a diet...aside from the craving bread thing.) Not once have I been hungry to the extreme between meals, and every time I was peckish a quick fruit snack was satisfying. BBC, I'm liking what you're putting down.

The above picture is the only one for today though as breakfast and lunch were leftovers. Breakfast was the peach and yogurt bowl and lunch was the bulgur wheat bowl. Dinner was worth waiting for though because it was divine!

This chicken is a lime-cilantro-thyme marinade and is served with boiled new potatoes and corn slaw in yogurt. This was the meal I instantly was looking forward to when I initially read the menu, and I am so happy with it! Admittedly, to avoid the bland meat fiasco of yesterday, I added a bit of salt to the marinade and the slaw. But it wasn't much and I was so glad I did! The chicken is zesty, yummy, and (provided you cook it right) juicy. The slaw was a perfect crunchy compliment to the chicken, although make sure you slice your cabbage thinner than I did mine. And although cilantro (or coriander) was in everything, I couldn't taste it beyond a lovely freshness it brought to the meal.

Honestly, this meal plan is changing the way I look at how I usually plan my meals. Although today was a bit lethargic, I think I'll carry on certain elements.

Calories Burned: 1,783 (224 of which were active because I was lazy today and only went on a short walk)
Calories Consumed: 1,700 (includes an orange and lemonade which was not diet-friendly)
